Chicken Potato Top Pie in Mushroom Gravy

This hearty winter dish will keep everyone full & warm on these cold winter days!


- 2-3 Large Chicken Breasts, cubed
- 1-2 Medium Carrots, diced
- 1 Brown Onion, diced,
- 3-4 Large Flat Mushrooms, diced
- 4-5 Large Potatos, boiled & mashed
- Orgran Pastry Mix
- 2 Eggs, for Pastry Mix
- Orgran All Purpose Flour or Cornflour
- 2 Massells Chicken Stock Cubes
- 1/2 tsp Cummin
- 1/2 tsp Parsley
- 1/2 tsp Thyme
- Salt & Pepper

- Preheat oven to 180, bake.
- In a large bowl, mix up Orgran Pastry mix. Roll it out flat & line dish with it.
- Peel & cut potato, put on to boil.
- Cut chicken into cubes. In a large fry pan, lightly fry the chicken until browned, and then set aside.
- Dice onion & carrot. Lightly fry the onion & carrot, until softened.
- Dice mushrooms and add to the onion & carrot in the fry pan.
- In a measuring jug, pour in 2 litres of boiling water, then add the chicken stock cubes, cummin, parsley, thyme, salt & pepper & flour/cornflour. Stir until the flour/cornflour is fully mixed in.
- Add the chicken pieces back in to the fry pan & then pour the stock mixture in. Let it simmer until the gravy begins to thicken.
- Once the potato's are soft enough, drain the water, add a little milk or milk alternative & mash.
- Once the gravy has started to thicken, pour it chicken, vegetables & gravy into the dish with the pastry. Cover the entire dish with mashed potato.
- Put the chicken potato top pie in the oven & cook until the mashed potato is lightly browned & the pastry is fully cooked.
Tips & suggestions

- Make this dish in advance or save the leftovers (if you have any!), and you can freeze it in portions to take to work for lunch.
- Grate cheese on top of the mashed potato before putting it in the oven for a little extra flavour.
- You can easily turn this in to a full pie by using 2 boxes of pastry mix, or turn it in to a shepherds pie by not using any pastry mix at all!
- If you're really keen, you can even make this into individual pies using large muffin trays.
