KFC - Gluten Free Style

I've been working on this KFC recipe for a while now, and I've tried so many variations and I think I've come up with 2 that I've found are the best so far. So here's recipe number 1, from complete scratch.

- 3-4 Chicken Breasts
- Orgran All Purpose Flour
- Orgran All Purpose Rice Crumbs
- 3 eggs beaten or 3 Tablespoons of Orgran No-Egg Egg Replacer
- Salad ingredients
- A couple large potatoes, mashed
- Orgran Vegetable Gravy

Herbs & Spices

Roughly 1/2 tsp to 1tsp of each, dependant on tastes

- Salt
- Thyme
- Basil
- Oregano
- Black Pepper
- Dried Mustard
- Paprika
- Garlic Salt
- Ground Ginger
- White Pepper
- Onion Powder

- Put potatoes in a pot to boil until soft.
- Once the potato's are done, mash with a little bit of milk, or milk substitute, until soft and creamy. Put the lid on the pot, and put to one side.
- Get out 3 bowls, in one beat the raw eggs, in the second put in a couple scoops of flour and the herbs & spices, in the third put in a couple scoops of Rice crumbs. Cut your chicken breasts in to strips, then dip them first in to the bowl of flour, then into the egg, and finally in the rice crumbs, making sure each piece is well coated.
- You can chose to either bake the chicken or deep fry the chicken until completely cooked all the way through. If baking, make sure you line a baking tray with baking paper, drizzle a little oil over the chicken & bake for 35-40 minutes in the oven on 180. If deep frying, fill a pot with oil and heat on the stove until boiling, and carefully dip each chicken strip in, cooking until the outside is a golden brown.

- Mix together a couple of spoonfuls of the Orgran Gravy Mix in a cup of boiling water, and stir until thick.
- Put together a side salad.
- On each plate, place a couple of the chicken tenders, some salad and a scoop of mashed potato with a decent dollap of gravy on top, and enjoy!

Tips & Suggestions
- Feel free to play around with the herbs & spices, as everyone's tastes differ.
- Make these chicken tenders without any herbs & spices for a party treat with dipping sauces likeBarkers Salsa, Chilli Sauce or Beetroot Relish or Delmaine Tomato Sauce or BBQ Sauce.
Stay tuned for part 2 coming soon....
