Chickpeas - A Great Source Of Protein

With my recent digestion issues, I've been forced to get a little creative with my meals. Since having to go vegetarian, I decided to try my hand at using chickpeas as a substitution. And for the most part it's worked really well!

So in a couple of other posts, I mentioned I actually roasted my own chickpeas, which I thought would end up being hard & more time consuming then it actually ended up being.

Basically I used a can of Ceres Organics Chickpeas, thew them in a sieve and washed them under the tap for a couple minutes. Then I spread them out on a tray, lightly coated them in oil & then using my salt grinder I liberally sprinkled them with Pink Himalayan Rock Salt & Peppercorns. Popped the tray in the oven to bake at 180 for 40 minutes, until they were well dried out and little crunchy balls. Popped them into a resealable jar & I've been snacking on them & throwing them into most of meals. I've eaten so many I'm going to have to make another batch very soon!
