Christmas Cookies!

Gluten Free with Egg Free Options

I stumbled across this recipe a few Christmas's ago & everyone just absolutely loved them. I completely refuse to bake these during the year, just so they remain a special Christmas treat. So every year I get the family asking when I'm going to start making my "Christmas Cookies". Last Sunday, when the weather was blowing a gale & it was absolutely miserable, I decided to make up my first couple of batches for the holiday season.

- 125g of Butter
- 200g of Nestle Dark Chocolate Chunks
- 3 Eggs (lightly beaten) or 3 teaspoons of Orgran No Egg-Egg Replacer
- 1 Cup of Brown Sugar (we use Chelsea's Low G.I. Brown Sugar)
- 1 1/2 Cups of Orgran All Purpose Plain Flour
- 1/2 Cup of Nestle Cocoa Powder
- 200g of Nestle Chocolate Bits

- Preheat oven to 180c (160c fan forced). Line baking trays with baking paper.
- Put chocolate chunks & butter into a small pot & stir over a low heat until the butter & chocolate has melted & the mixture is smooth. Pour into a large bowl to cool.
- Once the mixture has cooled, add eggs & brown sugar & stir well.
- Sift flour & cocoa powder together & add to the mixture. Throw in a bag of chocolate chips. Mix all together until it forms a solid dough.
- Roll into balls or use cookie cutters to get shaped cookies.
- Bake for 10-12 minutes or until the tops of the cookies are slightly firm.
- Cool for about 10 minutes, and then enjoy the gooey chocolate goodness!

Tips & Suggestions
- You can also add chopped hazelnuts, peanuts or cashew nuts if desired.
- Sift a sprinkle of Chelsea's Icing Sugar over the tray of cookies before serving, for an extra bit of Christmas magic.
