Burgers for BBQ season

Gluten Free/Dairy Free - Vegan/Vegetarian Options

Like pizza, I absolutely love burgers as you can get as creative as you want to be! On Saturday, we decided to make Hawaiian Style burgers, with Premier Beehive Shaved Ham & tinned pineapple, and everyone (including our guests who aren't gluten free) absolutely loved them!

- Allergy Wise Burger Buns
- Burger toppings -
- Sauces -
- Homemade Burger Patties (see below for my well loved recipe)

- With all the fresh ingredients, I just shredded the lettuce & chopped up the cucumber, tomato & gherkins. Left the pineapple in whole rings, and the ham in it's full slices.
- Burger patties were cooked up on the bbq, then popped in the oven to heat through.
- Burger buns were put in the oven for about 10 minutes, just to heat them through.
- Serving is just the easiest with burgers, we just let everyone assemble their own!

Homemade Burger Patties

These burger patties are so yummy, I always serve these up at BBQ's, and there are never any leftovers, they just get devoured! The best part is, I make these up well in advance, wrap them in baking paper & pop them in the freezer in a freezer bag. Then you can just pull them out to defrost a couple of hours before you want them.

- Tray of mince
- Carrot
- Courgette
- Onion
- Salt & Pepper (to taste)
- 1/2 cup Almond Meal or Cornmeal (for binding)
- 1/4 cup Almond Meal or Cornmeal (for coating)
- 2 Teaspoons No Egg-Egg Replacer (or 2 eggs, lightly beaten)

- Finely grate the carrot, courgette & onion (or use a food processor if you're making a large batch), lightly pan fry until soft & set aside to cool.
- In another bowl, pour the 1/4 cup of meal & set aside.
- In a large mixing bowl, add the carrot, courgette, onion, salt, pepper, mince, 1/2 cup of Almond or Corn meal & No Egg-Egg Replacer/Beaten egg. Mix thoroughly, until the mince & meal start to bind.
- Start forming the mixture into patties, as large or small as you want, roll in the remaining meal, and set aside on a plate.
- Now you can either freeze them, throw them on the bbq, or into a fry pan, and cook until thoroughly browned.
Tips & Suggestions
- Play around with burger toppings, beetroot, egg, cheese ( Angelfood Mozzarella slightly melted over the pattie is delicious!) are all delicious on burgers, and it's just a matter of how wide your mouth can go!
- For Vegan/Vegetarian options, you can make patties out of Quinoa, Potato, Kumera, or to simplify it, why not make a Falafel burger! Just top with hummus & Beetroot chutney instead of tomato sauce.
- Serve with homemade fries or Polenta chips.

And now I'm officially starving & I think I'm going to make Falafel Burgers next week!
