Friday Night Fish & Chips

Gluten Free & Dairy Free

Fish & Chips on a Friday night is such a big part of the Kiwi culture. Unfortunately it's very hard to find safe gluten free fish & chips (though I do know of a few good places around the North Island - See below for shop names). This recipe is a quick & easy one I've adapted from several different sources, including my wonderful Nana, & Jamie Oliver.

Recipe

- Fish of choice (I prefer Snapper or Terahiki)
- Chips of choice (store bought/homemade/Polenta chips - see below for recipes)
- Vegetables of choice (for this one we chose boiled spinach & fresh tomato)
- Salt & Pepper (I use Himalayan Pink Rock Salt & Mixed Peppercorns)
- 1 Teaspoon Basil
- Orgran Plain Flour

Directions
- Pat fish dry with a dry paper towel.
- Grind Salt & Pepper over both sides of the fish, lightly.
- In a bowl mix together flour & basil, then dip fish in, coating thoroughly on both sides.
- Pan fry in either butter or oil, until fish is browned on both sides.
- Serve with chips & vegetables.

Homemade Chips

Vegetable Chips

Ingredients

- 4 large Potato's
- 1 medium Kumera/Sweet Potato

Directions

- Heat oven to 200C.
- Peel the potatoes/Kumera and cut them into long chip shapes – the thickness you do is entirely up to you, though the width of your finger is ideal.
- Rinse under the cold tap and pat dry with a tea towel.
- Spread the chips on a large non-stick baking tray and toss with oil.
- Bake until firm on the outside & soft on the inside.

Tips & Suggestions
- You can make chips out of any root vegetable including carrots & turnips.

Polenta Chips

Ingredients
-1/2 Packet Quick Cooking Polenta
-1 Litre Boiling Water
- Pinch of Salt
- 4 Tablespoons Parmesan Alternative
- Olive Oil

Ingredients

- Preheat Oven to 190
- Put Polenta in to a pot on a low heat & slowly whisk in water & salt. Keep whisking while the Polenta thickens. Stop when it starts to bubble.
- Remove from heat & stir in the cheese.
- Pour Polenta onto a plate & use a spatula to shape it into a thick cake. Leave to cool completely.
- Once cooled, cut into chips and place on a oven tray (non stick or lay down baking liner first). Brush with a little oil & bake for 25-30 minutes until crunchy & golden.

Gluten Free Fish & Chip Shops

Napier - Ma's Fish & Chips
They have a dedicated GF Frying Vat & Grill. The gluten free range is extensive from Fish to Squid Rings, Pineapple Rings to Hotdogs, Burgers & Toasted Sandwiches. On top of that their sauces are gluten free. It was so wonderful to be able to pick up fish & chips & go sit on the beach again!

Wellington - Mt Vic Chippery
I haven't personally tried the Fish & Chips there, but I've had nothing but rave reviews from the coeliac's I know who have been there.

Masterton - Iberia
While these guys are more of a restuarant, if you're looking for good gluten free fish & chips (and many other items) and you want a sit down meal, Iberia is absolutely wonderful. The staff are so friendly & really know what they're doing.
