Bibimbap - Korean Stir Fry

Gluten Free/Dairy Free - Vegan/Vegetarian Options Available

So I found this recipe online, and there are so many variations on it, you can basically add anything you want & take away any ingredients you don't want. While the prep time does take about 10-15 minutes, the cooking time is actually incredibly quick. This has easily become on of our standard lazy meals at home! So here is our basic recipe that we use at home, though if you want something a little more challenging, just google Bibimbap.

-1 Cucumber & 2 Carrots, cut into matchsticks
-1 bunch fresh Spinach or Bok Choy, thinly stripped
-2 tablespoons Ozganics Teriyaki Marinade
-1 tablespoon of Oil
-1 tablespoon Sesame Oil
- 1 clove of Garlic, diced, or 1 Tablespoon minced garlic
- Beef/Chicken/Tofu strips
- 4 Eggs (optional)
- 2 cups of cooked Ceres Organics Quinoa/Rice Blend
- 1 teaspoon of Ceres Organics Sesame Seeds


- Cook Quinoa/Rice Blend according to instructions, & set aside.
- Chop Cucumber into thin sticks & set aside to marinate in Teriyaki Marinade.
- Boil Spinach/Bok Choy in 2 cups of water until soft, set aside with more marinade.
- Heat oil in pan & cook carrots until softened. Stir in garlic until fragrant. Stir in cucumber & Spinach/Bok Choy, then after 1 minute, set all aside.
- Cook Beef/Chicken/Tofu in pan. Put aside.
- If using eggs, fry separately.
- To assemble, divide Quinoa/Rice into 4 bowls, top with spinach/bok choy, cucumber & carrot & a few pieces of beef/chicken/tofu. Place 1 egg atop each serving. Drizzle each bowl with 1 teaspoon of sesame oil & a sprinkle of sesame seeds.

Tips & Suggestions
- I love to add mushrooms to this as well, so I lightly pan fry the mushrooms after I cook the carrots in the garlic, so the mushrooms soak up the residual garlic.
- I also like to add onion to it, I cut the onion in to rings and lightly pan fry them. I then set them aside, and add them back in when I add the Bok Choy back in.
- If the thought of hot cucumber isn't to your taste, substitute with courgettes instead. I like to peel them in to strips, marinate them in the Teriyaki Marinade, then lightly cook them for a couple minutes until soft.
- If you are using Tofu, marinate it in the Teriyaki Marinade before cooking it, so it has a bit more flavour.
