Chicken Cashew Stir Fry - Vegan Option Available

I make stir fry's on a regular basis, and I absolutely love Chicken/Cashew stir fry, so I decided to try it with the GF Treets coated chicken, just because I'm a bit lazy when it comes to cooking. Any time I can find a shortcut I will, and the GF Treets Chicken worked wonderfully for cutting down on both prep & cooking time, plus it added a little extra flavor to the dish.

Ingredients -

- 1 ½ cups Quinoa- Rice Blend, cooked
- ½ Pack Ceres Organics Cashews
- Vegetables: Onion, Broccoli, Mushroom, Capsicum, Mini Corn, Carrot – Peeled & sliced
- 1 Pack GF Treets Chicken
- 2 Tablespoons Oil
- 2 Tablespoons Ceres Organics Sesame Seeds (optional)

Directions

- Boil Quinoa-Rice Blend until cooked, set aside to cool.
- Cook Chicken in a hot wok or frying pan with oil, until tender. Set aside.
- Cook vegetables in hot wok or frying pan, until tender. Add Cashew nuts & chicken, until fully cooked.
- Stir in cooked Quinoa- Rice Blend, until hot.
- Serve with a sprinkle of Sesame Seeds

Tips & Suggestions -

- For a Vegan/Vegetarian Alternative omit the chicken, and instead soak some diced Tofu in Soy Sauce before adding to the stir fried vegetables & cashew nuts.
- Steam the Quinoa/Rice blend instead of boiling for nice fluffy rice.
- When cooking the veggies, add a bit of ground peppercorn, Himalayan Rock Salt & a pinch of basil for a little bit more flavor on the veggies.
