Quick & Easy Nacho's

Gluten Free/Dairy Free - Vegan & Vegetarian Options

Nacho's is such a versatile dish to make, it can be made with mince or chicken, or without meat all together! Beans & lentils are a great alternative to make this dish Vegan/Vegetarian, as is tofu or eggplant. You can add any vegies you like to it and it will still taste great! Here's my basic recipe -

Ingredients
- 500g Beef Mince
- 1 Can of Delmaine Baked Beans
- 1 Can of Delmaine Crushed Tomato
- Garden Of Eatin' Corn Chips - Either Plain or Chilli & Lime will do
- Barkers Chunky Salsa, simmering &/or topping
- Angelfood Parmesan, for topping

Directions

- Brown mince in a little bit of oil
- Once mince is browned, add Baked Beans & Chopped Tomato's.
- (optional) If using Barkers Salsa for simmering, add half the bottle to the pan with half a cup of water & simmer for 10 minutes.
- Place corn chips into bowls & spoon nacho mince over the top. Sprinkle the cheese over the top & grill in oven to melt.
- Top with remaining Salsa.

Tips:
- I like to flavour the mince with homemade Taco Seasoning -
2 Tablespoons Chilli Powder (I tend to just do a teaspoon, otherwise it's a bit spicy for me)
2 Tablespoons Ground Cummin
1 1/2 Teaspoons Onion Powder
1 1/2 Teaspoons Garlic Powder (can substitute with Crushed Garlic)
1/2 Teaspoon Black Pepper
1/2 Teaspoon Salt

- For vegetables I like to add half an onion, a handful of chopped mushrooms & half a capsicum, diced, and cooked in with the mince. On the side I like to add some shredded lettuce, diced tomato & peeled carrot.
- I also like to add a couple dollops of Sour Cream.
