Falafel Burgers

Sometimes I just can't be bothered cooking. It's not because I don't want to eat, it's just I'm uninspired with the same old meals & I don't really have the energy to try a new recipe or make something up. this happened a few days ago in our house, where neither Jasmine nor I could really be bothered as we were still recovering from the epic 2nd birthday. Someone mentioned burgers offhandly, which is something we haven't done in a while, and while I was struggling to think of a vegetarian option...

Rainbow Cupcakes

I made these cupcakes as a little something extra for my nieces birthday party - we were expecting a lot more people to be there than there actually was, and we were worried there wouldn't be enough cake to go around. In reality, we were giving the cupcakes away as people were leaving just to get rid of them! These are a lot simpler than the cake was, and only took me a couple of hours to bake, let them cool down, and ice....

The Allergy Friendly Unicorn Cake

Unicorn cakes have been all the rage in the past year. There have been so many variations of the cake, from different colours to different flavours, unicorn cake successes & unicorn cake fails. But in all my searching on unicorn cakes, I couldn't find a good allergy friendly one. So my sister and I came up with our own - completely gluten free, dairy free, egg free, nut free, vegetarian/vegan, banana free & coconut free (we have a lot of different food allergies in our family!!). This is no...

Premixes - Dirty Word or The Best Thing Ever??

Before I went gluten free, the word "Premix" when applied to baking was the dirtiest word I could think of. There was nothing like pulling out all the ingredients & baking materials & making a cake from scratch. It felt like a reward for all the "hard work" that went into baking, look what I made, from beginning to end, this gorgeous cake/bikkies/etc. A Premix felt like cheating... All I did was add water, or eggs, or oil. No real skill or art to it. After going gluten free, I tried... Oh did I ...

Quick and easy Chicken Salads

Summer is here so it's time for light & easy meals! Who wants to be slaving over the stove when the weather has been so gorgeous (okay, not counting last weeks weather bomb lol). I've been playing around with the classic chicken salad since it's so easy to cook, there's barely any prep time & they're light on the stomach while being filling... not to mention the nom nom factor! Since we've also planted a rather large veggie garden, and we've got several types of lettuce growing as well as herbs ...

Apple Pie

Sometimes you just feel like Apple Pie. I had a week off last week, and while I meant to tinker around with new recipes, an apple pie is all I ended up doing, but it was a pretty good apple pie, if I do say so myself. Please bear in mind it's been about 5 years since I last had apple pie, as that was the last time I was well enough to be able to eat gluten, so my recollection of apple pie could be through rose tinted glasses. Nonetheless, the pie went down a treat with everyone. Ingredients: - O...

Chickpeas - A Great Source Of Protein

With my recent digestion issues, I've been forced to get a little creative with my meals. Since having to go vegetarian, I decided to try my hand at using chickpeas as a substitution. And for the most part it's worked really well! So in a couple of other posts, I mentioned I actually roasted my own chickpeas, which I thought would end up being hard & more time consuming then it actually ended up being. Basically I used a can of Ceres Organics Chickpeas, thew them in a sieve and washed th...

Building The Perfect Protein Bowl

So a couple posts ago I shared my Falafel Protein Bowl, and told you I'd be sharing a few more! There is quite the art to making a protein bowl, I've posted a picture below as this is what I use to build my bowls, though I do tend to take creative licence due to my various food issues (no high fibre vegetables allowed!!). So kudos to Lorna Jane Active Living for their wonderful help!...

My New Obsession - Falafels! Part 2

Continuing on from Part 1, I've always enjoyed wraps but finding gluten free ones that didn't taste like cardboard has been hard. However I finally discovered these ones by Old Time Bakery, and they are absolutely delicious, don't taste like cardboard, and best of all don't soak up all the sauce leaving the rest of the food feeling dry! So here's my take on the old falafel wrap! Ingredients - Old Time Bakery Wraps 4 Pack - Orgran Falafel Mix or Ceres Organics Falafel Meal - Barkers Beetroo...

My New Obsession - Falafels! Part 1

So with my recent health problems, I had to give up meat late last year as I found myself reacting quite badly to it (hopefully, with some help from a great specialist I'm seeing, this is only temporary). I had to find something new, that I wasn't reacting to, to bulk up my meals. And thus my obsession with falafels was born! I've found that they are incredibly versatile and pair well with so many types of meals & flavours. We stock two different brands of falafel mixes here at Cornucopia, ...

Gnocchi Bake

So sorry about being awol recently! This year has been very hectic, what with moving in the engraving business, and then I've been having more health issues, which has finally been fully diagnosed (I hope!!). While none of these are curable, there are various treatment options available but some of them will be in Auckland. So with my health being very bad this year I haven't quite had the time or energy to trial new recipes, and one of my conditions causes food allergies, so what I've been ab...

New Year, New Ventures

So it has been a while since our last blog post, sorry for that guys! I had a whole list of recipes I wanted to try & then share with you all, but it all got a little sidelined over the Christmas period, not just due to the craziness here instore, but due to being sick for almost a month over the holiday period. As I've explained before, not only do we have Cornucopia, but we also run Video Ezy & NZ Post instore. As you can imagine, we were fairly busy with all the Christmas sending ove...

Christmas Cookies!

I stumbled across this recipe a few Christmas's ago & everyone just absolutely loved them. I completely refuse to bake these during the year, just so they remain a special Christmas treat. So every year I get the family asking when I'm going to start making my "Christmas Cookies". Last Sunday, when the weather was blowing a gale & it was absolutely miserable, I decided to make up my first couple of batches for the holiday season....

Chicken Kiev

So I have say thank you to one of my sisters for re-introducing me to the wonder that is Chicken Kiev. Thankfully it can be made both Gluten & Dairy Free so my other sister can enjoy it as well! And she does. Last night I got home from work and Jasmine was doing our weekly meal planning, and we do have a tendency to fall into a bit of rut with meals, so there we are at the kitchen counter wracking our brains for something different from the norm and I suddenly thought of Chicken Kiev. Just l...

Chicken Soup

This is an absolutely fantastic recipe that my mum always made for me when I was sick, which makes use of the leftovers from Roast Chicken. I always try to have a couple containers of this sitting in the freezer for when I start to feel sick. Bear in mind all ingredients in this recipe are optional, based on your specific dietary requirements (specifically the onion & garlic/onion flakes). Ingredients - Whole Chicken Carcass, cooked, with some chicken still on the bones - Potato, peeled ...

Friday Night Fish & Chips

Fish & Chips on a Friday night is such a big part of the Kiwi culture. Unfortunately it's very hard to find safe gluten free fish & chips (though I do know of a few good places around the North Island - See below for shop names). This recipe is a quick & easy one I've adapted from several different sources, including my wonderful Nana, & Jamie Oliver. Recipe - Fish of choice (I prefer Snapper or Terahiki) - Chips of choice (store bought/homemade/Polenta chips - see below for ...

Are your household cleaners gluten free?

Do you suffer from skin irritations & allergies? Eczema, dermatitis, random rashes? Are you aware that it could be caused by gluten or dairy contained in your household cleaning products, including dishwashing liquid & laundry powders? For years as a kid I suffered with severe eczema. By the time I was a teenager I'd moved on from eczema to full dermatitis covering my hands. As many woman in my family suffered from dermatitis I figured it was just an inherited trait & put up with it...
